Chinese New Year, or Spring Festival, is the most important holiday in the Chinese calendar. Every dish served during this celebration carries deep symbolic meaning, representing wishes for prosperity, happiness, and good fortune in the coming year.

Fish for Abundance

A whole fish is essential to the New Year feast. In Mandarin, the word for fish (鱼, yú) sounds like the word for surplus. The fish is often steamed whole with ginger and scallion, and should be left partially unfinished to symbolize having more than enough in the new year. The head and tail must remain intact to represent a good beginning and ending to the year ahead.

Dumplings for Wealth

Shaped like ancient Chinese gold ingots, dumplings represent wealth and prosperity. Families gather on New Year's Eve to make dumplings together, with some hiding coins inside for extra luck. The act of making dumplings is as meaningful as eating them — it brings the family together around the table, each person contributing to the shared feast. In northern China, eating dumplings at midnight marks the transition from the old year to the new.

Noodles for Longevity

Spring Rolls and Tangyuan

Spring rolls, named for the Spring Festival itself, symbolize wealth because their golden, crispy shape resembles gold bars. Tangyuan — sweet glutinous rice balls filled with sesame or peanut paste — represent family togetherness, as the round shape symbolizes unity and completeness. These are traditionally served on the fifteenth day of the new year, marking the end of the celebration.
