Chengdu-style wontons served in a pool of Szechuan chili oil (红油, hong you - "red oil"). Multi-day preparation process: duck is marinated in Szechuan spices (花椒, star anise, cinnamon), slow-smoked over camphor wood and jasmine tea leaves for 2-3 hours, then roasted until skin crisps.
