Meet China Jade: Authentic Szechuan Cuisine in Rockville, MD

By Hong Kong Palace Culinary TeamApril 18, 20264 min read

Hong Kong Palace has been serving authentic Sichuan cuisine in Falls Church since 2010. That same passion for the "ma la" tradition—the iconic numbing-and-spicy combination that defines the best of Szechuan cooking—now has a home in Rockville, Maryland. China Jade is our sister restaurant, and it shares everything that has made Hong Kong Palace one of the most respected Chinese restaurants in Northern Virginia.

Same Roots, New Address

The team behind China Jade is the same family that built Hong Kong Palace from the ground up. The recipes, the sourcing standards, and the kitchen philosophy are identical. When we committed to the same uncompromising approach that earned us recognition from Tyler Cowen's Ethnic Dining Guide and Washingtonian's Cheap Eats list, we committed to it at both locations. If you have eaten at Hong Kong Palace in Falls Church, you already know what to expect at China Jade. If you have not, Rockville is a great place to start.

What Makes Szechuan Cuisine Different

Szechuan cooking comes from Sichuan province in southwestern China — the same region that gave the culinary world Ma Po Tofu, Dan Dan Noodles, and Tea Smoked Duck. The defining feature of this cuisine is the Szechuan peppercorn, a spice that creates a distinct tingling, numbing sensation on the tongue. Combined with dried chilies, fermented doubanjiang paste, and high-heat wok technique, Szechuan cuisine produces flavors unlike any other regional Chinese cooking.

The "ma la" pairing — ma (numbing) from the peppercorn and la (spicy) from the chilies — is the foundation of the cuisine. China Jade works within this tradition without shortcuts. The peppercorns are whole and freshly toasted. The doubanjiang is from Pixian. The wok heat is high enough to produce authentic wok hei, the smoky char that separates restaurant-quality Szechuan from everything else.

Rockville, MD: A Natural Fit

Rockville sits at the center of Montgomery County's diverse dining landscape. It is one of the most ethnically diverse cities in Maryland, and its restaurant scene reflects that. But authentic regional Chinese cuisine — not the Americanized takeout version, but the real thing — has always been harder to find than it should be. China Jade fills that gap. The Maryland suburbs finally have a Szechuan kitchen that takes the cuisine seriously.

What to Order at China Jade

If you are visiting China Jade for the first time, the same dishes that define Hong Kong Palace are the place to start. Look for Ma Po Tofu — silken tofu in a doubanjiang-based sauce, with ground pork and enough Szechuan peppercorn to make your lips tingle. Dan Dan Noodles are the benchmark dish of Sichuan street food: thin noodles under chili oil, sesame paste, and crispy pork. If the Tea Smoked Duck is on the menu, order it — it takes two days to make and tastes like it.

For groups, a cumin beef stir-fry and a whole fish preparation in chili broth (shui zhu yu) make strong centerpieces. Szechuan cuisine rewards sharing — the flavors are designed to contrast and complement across multiple dishes on the table.
